Georgia College chef named 'Chef of Year'

Timothy Grayson of Sodexo Food Services at Georgia College has been named the United States Sustainable Pork Producers Association “2011 Chef of the Year” for his winningTimothy GraysonTimothy Grayson pork recipes and for his lifetime contributions to the culinary arts and the practice of sustainability.

“I like to incorporate healthy locally grown and produced products into my cooking as they help to make a positive impact on the environment, the identity of the food and they taste fresh,” Grayson said. “In addition, pork is a great tasting and healthy meat to use as a center of the plate item. It is very versatile.”

Chef Grayson has been awarded a cash fellowship prize and matching prize donated to his selected environmental charities.  He also wins a trip to Seattle, Wash., to the pork producers’ Culinary Center and will be featured on its “Great Chef’s Use Sustainable Pork” TV promotion airing on the Food Network and other national media outlets.

Originally from Orlando, Fla., Grayson started his career at Walt Disney World. He is a culinary graduate of Ecole de Cuisine in Paris and the Cornell University Kellogg School with a master’s degree in hotel and hospitality management. He previously co-owned the award-winning Café Europa restaurant in Orlando and has worked for many years internationally in the hotel, cruise and club industry.

He previously was executive chef for catering operations at Churchill Downs, home of the Kentucky Derby. In Kentucky he won the American Culinary Federation Professionalism award for his contribution to the apprenticeship program for young culinary professional hopefuls and for his implementation of locally produced products at Churchill Downs.

Grayson has written food, wine and travel articles for such publications as Southern Living Magazine, The Orlando Sentinel, The Sustainable Blog Barn and NBC's Today Show. He is a member of the International Food, Wine and Travel Writers Association, Association of Food Journalists and The British Guild of Food Writers.
